Vineyard Notes
The excitement of our estate harvest each year begins with a Sauvignon Blanc pick, and 2021
began at 4 a.m. on September 9th. The "Oasis” block, named for the volunteer Palmetto tree there,
was the first to be picked and produced the grapes which we selected as the “zingiest”. All
own-rooted Clone 1 Sauvignon Blanc, in 6x10 rows on rolling terrain, 4.91 tons were picked at 21.0º
brix.

Winemaker Notes
The grapes were night-harvested by hand and immediately transported to the winery to be gently
fed into our Puleo bladder press as whole berries, but no stems. Gently pressed over a period of
about an hour, the juice was settled, then racked off solids and inoculated with VL3 yeast. Fermentation was kept slow and cold (60°), and Malo-lactic fermentation was inhibited. That’s it - grapes
and yeast! The wine was lightly bentonite fined, cold stabilized and cross-flow filtered, then bottled
the same year picked! Vegan.

Other Notes
The Vintage
With only one pre-season storm event, 2021 was another drought year. Our 38-year old vines reach
deep into the aquifer, so other than some smaller than normal leaf canopies, the vines produced
130 tons of beautifully balanced and flavor concentrated grapes. The season was near-perfect with
a long ripening season, cool mornings, ample fog and few heat events. Harvest started and ended a
bit later than usual, providing extended “hang time” for grape development. Might be epic!
